It's Snowing!



Hello Snow! I woke up this morning in hopes of getting my new car to find 4 inches of snow and it's still coming down! Jack hates cold weather but he felt the urge to play in the fluffy snow. I love Kansas Weather.. last week was mid 60's, today it is 4 degrees and snowing, next week it's gonna hit 70!

Scrapbooking






So i've been scrapping on and off for about 7 years now and i have only completed one albulm.. not to mention i'm not very creative with it. Most of my pages look plain and simple. My cousin marie is starting to get into it and has given me some good ideas. I have so much scrap junk that it's eating me out of my little kitchen i work in. What's bad is that i spend probably about 40-50 dollars each time i go to the craft store! Im not catholic, but since it yesterday was ash wednesday, i think i'm going to climb aboard this year and pledge to not go to any craft stores! Then maybe I can use all that i have and save money at the same time! Below are a couple scrap pages I recently did... you'll see how plain they are... One is a section of my Bachelorette party, the other is for my beach pictures. I did a plain page for my rehearsal dinner page but it's blurry.




Breaks up, back to work i go. Toodles!

Kenny.. Kenny.. Kenny

My love for Kenny Chesney is no secret. I tease Danny that Kenny is my first Husband. lol. silly yes. I've been to about 5-6 concerts of his now.

Anyway, Kenny presale is going on now and I have so much excitement I can't stand it... but at the same time i'm trying not to shed tears becuase of ticket prices. Of Course tickets are advertised for $20... but those are a few select seats in the nose bleed section. And if anyone has ever been in the Sprint Center, they know that one must not have a fear of heights in that building. And one must also have no hips or thighs to sit in the upper level seats! Not sure why they are smaller up there, but they are! And this is Kenny we are talking about, I refuse to sit far away. So that leaves me to purchase lower lever or floor seats = $89 a ticket. Being 5foot6 with floor seats at a country concert has no advantages. If being short isn't bad enough, then you have to try and see around all the dang cowboy hats! Now, don't get me wrong, i love a county boy... heck my husband sports his black cowboy hat and boots very well. but put a country concert in the city and every one pretends to be a cowboy. I guess it's their special time to play dress up. I say if you are county you are country all the time. like my husband... he wears his hat and boots everywhere, it's not just a front for a concert. people crack me up. SO back to the original complaint.. $89 bucks for a ticket! in this economy? COME ON KENNY! not like you dont make enough money as it is. And on top of the $89 there is about $20 in service charges and tax. I never thought i'd say this.. but kenny isn't worth that much money...

Good Car News!

We've finally came to a deal! Yippee! Dan and I will have to pay very little on whats left over on our car loan with it's all said and done. My Insurance is Geico, props for them. They have answered my calls and questions so promptly. Allstate (the other dudes insurance) has sucked. No return calls, it's taken 3 weeks to get it finished. Maybe i'm just rude and impatient... yes i know i am... but still! If you promise to return calls... do it! The other thing that pissed me off... they towed the car off yesterday (monday) and we made an agreement for it to be towed off on wednesday so I would have time to get all my stuff out of it! I have no $$ for the car, no letter stating i would get money for the car... I am not happy! LOL. My mother was able to take care of getting my belongings back for me today. God Bless her, I dont know what I'd do without her. So in the meantime, I'm trying to get ahold of Allstate to find out why the car was towed 2 days early and why I haven't received anything about it yet. . . (just smile and breathe tonya smile and breathe)

I'm pulling my hair out...

becuase i really want this car issue resolved! I've learned a valuable lesson... if you purchase a new or fairly new car... be sure to buy GAP INSURANCE. Gap insurance will pay of your car lein in an accident. As where I could be stuck paying $1300 on a car I can't drive and don't own! I'm hoping my car insurance can come up with the $1300 difference. If not, it's back to one car for 4-6 months. :( And there goes any signs of vacation that we wanted to take. :(

Scrappy Scrappin

This weekend I was a scrapbooking fool! My cousin, Marie, and I spent the whole weekend at craft stores and at home scrapbooking. Lots of fun. No pictures to post yet. I am just not one of those talented scappers. I put a picture on a colorful page and im done. lol. But this weekend Marie and I finally decided to step it up and be more creative. Some pages I see of others Scrappers is so freakin detailed, they must use 6 sheets of paper, ribbon, buttons, string... wow!

UPDATE....


update... update...
End of January I came down with a cold, nothing over the counter was knocking it out. I telephone the doctor and she gives me medicine.. 3 days of horrible itching, swelling and red hives, we realized i was allerigc to the medicine. New Medicine... All better.... yes?

ON my way to work... driving the compact minivan (the Kia Rondo), an older gentleman decides he wants to no longer wait on his red light and turn in the middle of oncoming traffic... i was the the lucky car he played chicken with. The Results? I ended up with a broken nose and pulled/torn ligaments in my right knee. My Car.

I'm still waiting to hear from the insurance company about my car. The car shop wants to total it. . . I'll leave my 4th message for them this week... it has only been 2 weeks... ugh. Good News=The other gentleman was ok.

Must Try Recipe - Strawberry Margarita Cupcakes

Strawberry Margarita Cupcakes

Ingredients:
2 c. unbleached all-purpose flour
1 Tbsp instant milk powder1 Tbsp baking powder
1/2 tsp salt
12 Tbsp (1 1/2 sticks) unsalted butter, at room temperature
1 1/2 c. sugar
1 Tbsp vanilla extract
3/4 c. strawberry margarita/daquari mix (or strawberry puree, strained removing seeds)
1/3 c. water
5 egg whites, at room temperature
3 c. confectioners’ sugar
8 Tbsp unsalted butter, at room temperature
3 Tbsp milk, plus more, if needed, at room temperature1 tsp vanilla extract
1/8 tsp saltzest of
1 limejuice of 1/2 that lime, at room temperature
Directions:-Preheat oven to 350 degrees and prepare 2 cupcake pans.-In a medium bowl, sift together the flour, instant milk, baking powder and salt and set aside. -In small bowl, combine strawberry puree and water and set aside.-In bowl of electric mixer, beat the butter and sugar together on medium-high until light (about 3 mins). -Beat in the vanilla extract. -Reduce the speed to low and, dividing the flour mixture into 3 batches, beat the flour mixture into the butter mixture alternately with the strawberry mixture just until combined.-In a large bowl, using an electric mixer fitted with clean, dry beaters and set on high speed, beat the egg whites until stiff peaks form. -Using a rubber spatula, gently fold the beaten whites into the batter just until incorporated. -Divide the batter between the cupcake molds.-Bake about 20-22 minutes or until a toothpick inserted into the centers comes out clean. -Meanwhile, make the frosting: In the bowl of an electric mixer fitted with the flat beater, combine the confectioners’ sugar, butter, milk, vanilla and salt and beat on low speed until combined, about 1 minute. -Stop the mixer and scrape down the sides of the bowl. Increase the speed to medium and beat until fluffy, about 3 minutes.-Add lime zest and lime juice and quickly beat on high until whipped (adding more milk if needed), about 30 seconds. -Remove from oven and let cool in the pans for 10 minutes. -Let cool on racks until completely cool.
